Bridal Shower Food : Pumpkin Soup
Ingredients
- 2lbs of pumpkin
- ½ pint of water
- 1½ pints of boiling milk
- 3 slices of stale bread (cut into little squares)
- one teaspoon of sugar
- 1½ oz butter
- Salt and pepper to season
- 1 large saucepan or stockpot
- 2nd saucepan
Procedure
Begin by removing the seeds and peeling the rind of the pumpkin.
Next. cut the pumpkin into small pieces, and put it into a large pan or stockpot
with the water. Now simmer very slowly for approximately an hour and a half or
until the pumpkin is tender. Next press the pumpkin through a sieve. In a second
saucepan boil the milk.
Then return the pumpkin to the first pan and add
the boiling milk, butter, sugar, squares of bread and season with the salt and
pepper. Return the soup to the heat, and bring to the boil, stirring occasionally.
Serve.
