Bridal Shower Food : Pesto Cherry Tomatoes
Ingredients
- Half a pound of cherry tomatoes
- Half a cup of fresh basil leaves
- One garlic clove
- One tablespoon pine nuts
- Five tablespoons of olive oil
- Salt
- Three tablespoons of a mixture of Parmesan and pecorino cheese
- or all Parmesan
- Ground black pepper
Procedure
Begin by washing the cherry tomatoes and drying on paper towel.
Then cut a slice from the stalk end, carefully scoop out the seeds
and drain the tomatoes.
Put the basil, garlic, pine nuts, olive
oil and salt into a blender or food processor. Blend until smooth.
Transfer to a bowl, stir in the cheese and season with pepper. Fill
each tomato with the pesto. Chill.
